Fairytale Eggplant

Fairytale Eggplant are less seedy than their large Italian cousins and lack their bitterness. Petite, with beautiful marbled skin, this variety offers a delicious, delicate flavor and delightfully creamy bite. This palm-sized eggplant is also a breeze to prepare. Sauté them with onions and a touch of vinegar and sugar for a quick caponata-style side. Or slice them in half and grill them, then top with garlicky yogurt for a cool/hot appetizer.
